We are building a precast concrete home with most walls exposed. We are seeking to create a concrete wet room where the walls and floor are exposed concrete and we are thinking to use Xypex as an additive in the floor pour to make it water proof. Would it pass a waterproofing test or would the water soak into the concrete over time?

Xypex will "waterproof" the concrete in that it will stop water from penetrating deeply into or through it.  This said, Xypex will not cause the concrete to become water repellent.  Water will soak into the top surface of the concrete and as such will not stop the concrete from staining.
Normally a water repelling penetrating sealer can be used for this - these are normally "silane" based. These will not stop water under pressure from penetrating into the concrete nor will they heal cracks (Xypex treatment will do this).  They can be used on Xypex treated concrete and the use of both might be a good solution for you.
